Chia Pudding - 2 ways


Chia is one of many superfoods. I love to make mine the night before and eat it for breakfast. And there is a lot of ways on how to make one of this mouthwatering puddings.

Banana Chia Pudding

This is one of my favorite ways to make a chia pudding. What you will need:

  • 1 ripe banana
  • 1 cup nut milk (i usually use soy, but you can use which ever you like)
  • 2 tbsp chia seeds
  • Vanilla extract or grounded cinnamon to taste (optional)

Peel and mash up the banana in a bowl using a fork, then place it in a mason jar or what ever container you would like to use. Pour in the nut milk and add the chia seed. Mix everything well. Add the vanilla extract or grounded cinnamon if desired and mix again. Make sure there are no seeds clogging together and place the mason jar in the fridge. You may want to mix it again after 5 and 10 minutes to really make sure you don't have any lumps. Then let it sit in the fridge over night or wait at least 40 minutes before enjoying.

Coconut Chia Pudding

What you will need:

  • 1 cup coconut milk (the thick, creamy one you would use for a thai curry)
  • 2 tbsp chia seeds
  • some coconut sugar or other sweetener to taste
  • sliced banana and strawberry as topping

Mix the coconut milk, chia seeds and coconut sugar or sweetener in a mason jar and place in the fridge. Give it an other quick mix after 5 and after 10 minutes so you don't get any lumps. Again leave in the fridge over night or wait about 40 minutes before topping with the sliced fruits and enjoying.
